Using a centuries-old Bedouin cooking method, meat, aromatic rice, and seasonal vegetables slow-roasted in an underground tandoor (pit).

 

This process allows the flavors to develop naturally, resulting in a rich, smoky, and deeply satisfying dish that is meant to be shared.
